recipe // chia pudding




So I jumped on the Chia Seed bandwagon! Ordered my self a bag of them and have been putting them in basically everything (well some what)- drinks, smoothies, yogurt.
The other day I saw someone post a photo on Instagram (inspired by Tumbleweeds Handcraft) of Chia Pudding, until then I had no clue such a thing existed. I browsed through a few recipes online and decided to give it a try. You can really make it any way you want, there doesn't seem to be an exact recipe you need to follow. And you can pretty much customize the flavoring to your liking.

Here's what I came up with:

Chia Pudding Recipe
1 cup Almond Milk
1 cup Coconut Milk
4 tbsp Chia Seeds
2 tsp Agave Sweetener
Berries (to mix with)
Cinnamon/Vanilla for flavoring
*If allergic to almond milk, you can double up on the coconut milk

Mix both milks, chia seeds and agave sweetener into a mason jar and seal off with a lid. Give the mixture a good shake in the jar, making sure there is no seed settlement at the bottom. Let it sit for about 20 minutes and give it another good shake. Place into the fridge over night or  let it set up for about 2-3 hours. Once it is set up you will notice the mixture is thick with a pudding-like texture. (If it is still somewhat liquid, you can add more chia seeds and let it sit a little longer). 
Serve with either your favorite berries, add a splash of vanilla, or sprinkle with some cinnamon.






It has a tapioca consistency, so if that isn't your thing then you might not be too fond of it. But I find it to be quite delicious as did my Husband, who was making faces at me the whole time I was putting it together. He said "Wow, it's actually really good!" Uhh duh, I made it!!
I am hoping to start making this instead of eating yogurt, trying to cut down on my dairy intake. So far I like it and will keep it going!

  1. Yum! I haven't tried chia in coconut milk. Have you tried kombucha with chia seeds? It's SO delicious.

  2. OMG I use almost the exact same recipe. I eat it every morning for breakfast. So much more filling, and tasty, than oatmeal :)

  3. So excited to try this! I have been using flax seed in my green smoothies, and can't remember what else I've used chia seeds for. How are you liking paleo? =) -Jessica L
